PASTITSIO (Baked Makaroni with Bechamel Sause)
185g butter
1 onnion chopped finely.
500g (1lb) minced beef
3-4 ripe tomatoes, peeled and chopped.
1/2 cup of white wine.
Salt and Pepper.
500g (ilb) macaroni
185 (6oz) Cheddar cheese grated
60g (2oz) Parmesan Cheese grated.
Bechamel Sause
185g (6oz) butter.
125g (4oz) flour.
5 cups hot milk
Salt and Pepper
2 Egg Yolks, beaten lightly.
Melt half butter in a large pan, add onnion and fry until golden brown.
Add minced beef and brown. Add tomatoes, wine and salt and pepper to taste.
cover and simmer for 20-30 minutes.
Boil macaroni in salted water. Strain, return to pan. Add remainind butter, melted.
Grease a rectangular-shaped baking dish. Place half macaroniin dish. Pour minced beef sause, cover with remaining makaroni.
Pour Bechamel sauce over macaroni in baking dish. Sprinkle over remaining cheese and bake
in a moderate oven for about 45 minutes serve warm with Greek salad.
To make
Bechamel sauce
melt butter in a sauspan over low heat. Add flour and stir for 1-2 minutes.
Add hot milk slowly, while stirring. Season with salt and pepper to taste. Bring to the boil, stirring continuously. Simmer for five minutes. Add egg yolks to sause and mix gently.
