TARAMOSALATA


  • 125g(4oz) stale white bread, crusts removed.
  • 60g (2oz) fish roe

    (tarama, available canned at continental food stores)

  • 3/4 cup olive oil
  • Juice of one lemon
  • 1 small onnion grated

    Soak bread in water. Squeeze dry. Combine fish roe with bread and beat until smooth. Gradually add oil, lemon juice and onnion, beating continuously until a creamy texture ia achieved. Chill and serve with Pitta Bread.
